Simple apple cake
Ingredients
125g butter
2 eggs
¾ cup castor sugar
1 vanilla bean, or a teaspoon of vanilla extract
4 apples
½ cup plain flour
2 teaspoon baking powder
Pinch salt
½ cup milk
Method
Preheat the oven to 180C. Grease and line a 22-23cm springform cake tin and line with baking paper.
Melt the butter in a small saucepan or in the microwave and set aside. Beat the eggs and sugar in a bowl with a whisk (you can do this by hand). It should thicken and form a ribbon when dropped from a spoon.
Split the vanilla pod and scrape the seeds into the egg mixture and put the pod in with the butter (or just add the vanilla extract to the eggs).
Peel, core and slice the apples.
Remove the vanilla pod from the butter and discard. Add the butter to the egg mix. Combine the flour, baking powder and salt and gently whisk in to the egg mix with the milk. Add the apples and stir to combine. Put the batter into the tin and bake for about 25 minutes. Rotate the pan and return to the oven for another 25 minutes or until it is starting to brown nicely and a skewer inserted in the centre comes out clean.
Cool in the pan and sprinkle with icing sugar and serve with cream.
